Ingredients

3 links Italian Sausage, skin removed
1 cup uncooked White Rice
3 cups fresh Kale
5 Portabella Mushrooms
2 cups water
Directions
Preheat oven to 350º
(1) Remove skin from sausage links and break up in large 10 inch skillet. Cook until brown. Drain fat.
(2) Add water and rice. Stir to cover rice and bring to a boil. Turn heat down to a simmer
(3) Place Kale on top of sausage and rice mixture and place lid on top. Let simmer about 15 minutes or until rice is cooked and almost all liquid has evaporated.
(4) Meanwhile, spray a 9x13 pan with cooking spray and place mushroom tops in pan.
(5) When the sausage and rice mixture is done, mix in the kale and scoop into 5 even portions into the mushrooms.
(6) Place in the oven 25-35 minutes or until mushrooms are fully cooked.
Makes 5 servings.
To reduce fat, substitute fresh turkey sausage. If using ground turkey, spices will need to be added for flavor.
