    -2 C. or 1 lb Dry Lima Beans
    -2 C. Frozen or Canned Yellow Sweet Corn
    -2 C. Chopped Tomatoes, 2 cup
    -1 Medium Onions chopped
    -1/2 Medium Red Bell Pepper chopped
    - 2 Medium Celery Stalks chopped
    - 3-4 Garlic Cloves chopped
    -1 T. Olive Oil
    - 2 T. Tomato Paste
    2-3 T. Old Bay Seasoning
    1/2 tsp. Cayenne Pepper


Soak Lima Bean in hot water for up to 2 hours or soak over night in cold water.

Rinse Beans in collander and set aside.

Take chopped vegetables, garlic, onions, red bell peppers and celery and sautee them with the olive oil in a pot until translucent.

Add lima beans and mix in pot. Add enough water to cover the lima beans with about 2-3 inches higher than the beans. Add old bay seasoning and cook until tender.

Add the corn and the tomato and cook for another 10-15 minutes in order to infuse the flavors.
