Ingredients



    * Celery, raw, 2 stalk, medium (7-1/2" - 8" long) (remove)
    * Onions, raw, 1 medium (2-1/2" dia) (remove)
    * Cucumber (peeled), 2 medium (remove)
    * *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" (remove)
    * Red Ripe Tomatoes, 4 medium whole (2-3/5" dia) (remove)
    * Garlic, 3 cloves (remove)
    * Vegetable Juice Cocktail (V8), 4 cup (remove)
    * Cider Vinegar, .25 cup (remove)
    * Olive Oil, 1 tbsp (remove)

Directions

Chop all the veggies. Place all ingredients in a large bowl and toss. In a blender or food processor, mix a few cups at a time until just slightly chunky. Add salt to taste. Serve chilled.
