Ingredients

3 heaping tbs Jamaican Jerk Blend
3 heaping tbs Emeril's Original Essence Seasoning
1.5 tbs onion powder
1.5 tbs garlic powder
1 tbs ground ginger
1 tbs black pepper
1tbs ground chipotle peppers
2.5 cups brown sugar
1 full rack pork ribs
Directions
Mix all the spices and seasonings in a medium mixing bowl. Add brown sugar and mix thoroughly.
Rinse the rack of ribs and pat dry with paper towels.
Place the ribs on 2 layers of aluminum foil. Press the dry rub all over the rack of ribs, cup side up first. Once the rub is covering the ribs, place foil on top and seal around the edges so no air escapes. Repeat for the second layer.
Place the foil wrapped ribs on medium low heat on the grill or 275 degrees in the oven. Turn at 20 minutes, then 15 minutes, then every 10 minutes until 75 minutes are up or you can smell the ribs all over the area. Place on a large cutting board and leave in the foil. Let rest for 10-15 minutes. Cut the top of the foil open carefully, avoiding the steam. Using a large, heavy knife, cut the ribs apart and serve. May serve 6 or more but if they are hungry, make 2 racks of ribs.
