    1 Tbsp extra virgin olive oil
    3 medium carrots, diced
    3 medium celery stalks, diced
    3 medium potatoes peeled and chopped
    1 large onions, minced
    1 medium zucchini, peeled and diced
    4-5 sprigs fresh parsley, minced
    1/4 tsp thyme, ground
    5 Cups white beans, cooked (2 cans is ok too)
    8 cups chicken broth
    1 Tbsp unsalted butter
    salt and pepper to taste


In large pot, add olive oil, carrots, celery, potatoes and onions and cook until veggies begin to sweat - approx 10 minutes
Add parsley, thyme, zucchini, broth and beans. Cook 25-30 minutes stirring occasionally
Puree' with emersion blender (I just pour mine into my blender) to desired consistency
Stir in butter, salt and pepper. Cook additional 5 minutes

Makes 10 servings approximately 1 1/2 cups each
