Ingredients

    2 oz. mini wheel pasta
    1 chicken breast, cooked and cubed
    1/2 c. petite diced tomatoes
    1 tsp. canola oil
    3/4 c. sliced, quartered zucchini
    1/4 c. diced onion
    1/2 c. diced red pepper
    1 clove garlic
    seasonings to taste (I use basil, italian seasoning, salt and pepper)

Directions

Cook pasta according to directions. Drain and toss with diced tomatoes.

Saute vegetables in canola oil until tender. Mix al ingredients in large bowl. Top with parmesan or mozzerella cheese.
