Number of Servings: 6


    3 bell peppers (I like to use one each red, orange, and yellow)
    1 cucumber
    1 medium red onion
    8 oz. feta cheese
    1/2 cup red wine vinegar
    1/2 cup water
    1 T kosher salt
    2 t sugar
    2 T olive oil


Combine vinegar, water, sugar and salt in small bowl. Stir until sugar and salt are dissolved. Chop onion and mix in to vinegar. Allow to soak while chopping other vegetables.

Chop peppers and cucumber into bite-sized pieces. Place in serving bowl. Cut feta into small cubes. Add to pepper mixture. Remove onions from brine and add to mixture, reserving 1/4-1/2 cup of the brine. Mix veggies and feta with reserved brine, and drizzle with olive oil.

Serves 6, and keeps well for 2-3 days in refrigerator.
