Ingredients

    4 boneless skinless chicken cutlets (2 breasts), 1 to 1 1/2 pounds, rinsed and patted dry with paper towels
    2 tablespoons low-sodium soy sauce
    1 tablespoon ground cumin
    1 teaspoon ground allspice
    1 teaspoon ground ginger
    1/2 teaspoon ground cinnamon
    1/4 teaspoon cayenne
    1/4 teaspoon ground nutmeg

Directions

Preheat broiler. Brush the chicken pieces with soy sauce. Rub spices all over cutlets. Broil chicken very quickly; it should take no more than 3 - 4 minutes per side.
