Ingredients

    1.25 cup whole wheat couscous – prepared with 2tbs olive oil
    224g chicken breast cooked & shredded
    112g green sweet pepper - cut in 0.5”matchsticks
    168g tomatoes - chopped
    168g cucumber –peeled & chopped
    112g carrots – finely grated
    1 onion – finely chopped
    120g black olives – olives chopped in half
    dressing ingredients below
    1.5 tbs olive oil
    1.5 tbs balsamic vinegar
    black pepper
    .25 tsp salt
    2 clove garlic - finely chopped or grated
    hot sauce
    juice 1 lime

Directions

Make as directed on packaging couscous allow to cool. Mix together the chopped tomatoes, peppers, cucumber, carrots, onions, chicken & olives in large bowl. Stir in the couscous until fully mixed. Make dressing add all ingredients for dressing in bottle or cup, mix well & pour over couscous mixture & stir in well. Chill salad in refrigerator – to allow flavors to develop best eaten 3hrs to 12 hrs later.

Makes 14 - 1cup servings

Note: chicken can be omitted or substituted for fish. Can also add cilantro or other herbs to the finished salad before chilling.
