Introduction

Number of Servings: 6

Ingredients

    3 large-ish zucchini
    2 cups cooked Quinoa
    2 egg whites
    2 med yellow onions
    20 oz extra lean ground turkey
    salt free seasoning of your chioce to taste or salt and pepper according to your preference.

Directions

Heat oven to 400F.
Cook Quinoa acording to package directions. I use 2 cups cooked.
Choose 3 zucchini that can be split and hold about 1 cup of stuffing in 1/2.
Cut zuccchini in half and scoop out insides leaving about a 1/2 inch shell all around.
Chop up scooped out zucchini and saute with chopped onions.
Beat egg white in large bowl with seasonings. (Fresh herbs are also very good in this - have fun playing with different flavors.)
mix all ingredients in bowl with egg whites.
Spray 9X13 baking dish with cooking spray.
If necessary cut a bit off the bottom of each zucchini half to make them sit firmly in pan.
Scoop approx 1 cup of meat mixture into each zucchini half.
Add 1/2 cup water to bottom of pan and cover tightly with foil.
Bake covered at 400f for about 45 minutes. Check that the water has not boiled away during cooking. Add more water as necessary.
After 45 min remove foil and sprinkle each zucchini boat with 1/2 tbs cheese and bake another 15 min.
Makes 6 servings.
