Tasty side dish for potato lovers. Tasty side dish for potato lovers.

    8oz baby red potatoes
    8 0z baby white potatoes
    1 c chopped onion
    1 c chopped green pepper
    1 c chopped red pepper
    3 med ears fresh sweet corn
    2 tbs olive oil
    seasonings to taste.


preheat oven to 400f
cut baby potatoes in half or quartes depending on size. try to make the pieces uniform in size.
Mix all ingredients in large baking dish.
Season with salt free mix. and or fresh herbs. Rosemary and garlic are great with this.
