    1 1/2 c uncooked Uncles Ben's Instant brown rice
    1/2 c chopped onion
    1 clove garlic minced
    2 TSP extra light olive oil
    1 can 15 oz diced tomatoes
    1 can 10.75 oz low sodium chicken broth add water to
    make 3 cups total
    1 15 oz can black beans, drained
    1 tsp salt
    1/2 tsp black pepper


In large skillet, or pot add olive oil, onions and garlic, saute until just cooked, but not browned. Add remaining ingredients, stir together and bring to boil, turn down to low and cover cook until rice is tender approx 20 minutes.
Each serving is about 3/4 cup. Makes approx 8 servings
Also if you like it spicer just have some fun
