    3 medium raw potatoes, peeled and grated
    3/4 cup grated cheddar cheese
    1/4 cup parmesan cheese, grated
    4 large eggs
    3/4 cup cottage cheese, 1%
    1/2 cup raw onion, chopped
    3/4 cup raw mushroom, chopped


Grate the potatoes. Chop the onions and mushrooms and lightly sautee them in broth until soft. Using a food processor or hand blender, blend eggs and cottage cheese until smooth. Mix veggies, potatoes and all remaining ingredients, including eggs and cottage cheese together until well mixed. Divide mixture evenly into minimuffin tray (20 each) and bake for 35-40 minutes in a 350 degree preheated oven.
