    3 cups bran flakes
    1/2 cup unsweetened applesauce
    21/2 cups all purpose flour
    21/2 tsp baking soda
    1 cup boiling water
    2 eggs
    3/4 cup splenda
    3/4 cup sugar
    2 cups lowfat buttermilk
    1/2 cup raisins


Preheat over to 400. In a large bowl, combine cereal with the boiling water. Let set for a few minutes to allow cereal to absorb the water. Stir in applesauce and eggs. Add remaining ingredients. Spoon batter into greased muffin tins, filling 3/4 of the way full. Bake 18-22 minutes or until golden brown. Remove from muffin tins immediately.
Makes approx 24 muffins.
If you don't want to make the entire batch at once, batter can be stored in the fridge for up to 6 weeks.
Store muffins in the fridge.
