    1 cup brown rice
    1 1/2 cups water
    1 cup cooked black beans, drained & rinsed
    1 chipotle in adobo, chopped


Put brown rice and water in a pot with a lid. Set the heat to maximum, and bring the rice/water to a boil uncovered. Then put the lid on the pot, and reduce the heat to low. Let the rice simmer for 20 minutes.
Stir in beans & chipotle (don't over mix or rice will be mushy). Turn off the heat, and let the mixture sit, covered for another 10 minutes.
Garnish with fresh cilantro if desired.

Makes about 3 1/2 cups. 1 serving is 1/2 cup.

  • Wow! This is so yummy!! I sauteed shallots and red pepper on the side and added that in at the end. The sweetness from the shallots was really nice. The rice could have cooked a little longer, but we had basmati brown rice so maybe it has different cooking times. We loved this dish! - 8/30/09
