    1 cup nonfat milk
    1 egg
    1 Tbsp + 1 tsp light margarine
    1 tsp vanilla extract
    1.5 c all purpose flour
    2 Tbsp cocoa powder
    2 Tbsp + 2 tsp Splenda
    2 tsp baking powder
    1/2 tsp salt


Preheat oven to 400 degrees F. Spray muffin tin with nonstick spray.
Combine milk, egg, margarine, and vanilla. In larger bowl, combine flour, Splenda, cocoa powder, baking powder, and salt.
Add milk mixture to flour mixture and stir just until flour disappears. Spoon into muffin tin, and bake for 20-25 minutes. Cool on rack for 5 minutes, remove from pan.
Makes 12 muffins.
