    8 gold potatoes
    8 carrots
    2 large onions
    2 garlic cloves
    2 tbsp olive oil
    1 tsp salt
    1 tsp italian seasoning
    1/2 tsp black pepper


Preheat oven to 400 degrees.

Wash and cut carrots into sticks. Don't remove the skin. Wash and cut the potatoes. Don't remove the skin. Cut onions into chuncks.

In large bowl, mix the olive oil, seasonings and garlic. Add pototoes, carrots and onions. Mix to coat.

Spray 2 large baking dishes with Pam and split into the two baking dishes. Place in preheated oven and cook for 30 minutes. Stir to make sure they aren't sticking. Cook for an additional 30 minutes or until tender.

Serves at least 8, maybe more.
