Introduction

When my family and I decided to make a lifestyle change and eat healthier, I just couldn't bring myself to relinquish this treat completely, so I adapted my oma's banana cake/bread (some call it cake, some call it bread) recipe to make it low fat and lower calorie and it tastes just as delicious! Number of Servings: 10

Ingredients

    1 1/2 cups splenda (sucralose)
    1/2 cup unsweetened applesauce
    2 egg whites
    3/4 cup lowfat buttermilk
    1 cup mashed banana (better if a little overripe)
    2 cup white flour
    1 tsp baking soda
    1 teaspoon vanilla extract

Directions

Mix all ingredients in a large mixing bowl until well blended
Use a blender if you like, but blending by hand works just as well (maybe compensates for a few calories??? haha)

Pour mixture into 9 x 13" pan or 9" round pan

Bake for 20 minutes at 325 degrees
or until light brown
(Temperature and baking time may need to be adjusted according to your oven)
