    2 TBS olive oil
    2 c uncooked short-grain brown rice
    6 garlic cloves, minced
    5.5 c water
    2 teaspoons chicken better than bouillon
    1/2 tsp salt
    4 TBS thinly sliced green onions (optional)


Heat oil in a large skillet over medium-high heat. Add rice, and saute for 1 minute. Add garlic; saute for 2 minutes. Stir in water, better than bouillon, and salt; bring to a boil. Cover, reduce heat, and cook over medium-low heat 45 minutes or until liquid is absorbed. Spoon into a bowl; fluff with a fork. Top with green onions.

  • This is the way I prepare rice, But cut the Olive Oil to one Tbs, use chicken broth instead of water and bouillon to cut down on the salt. - 8/3/09
