Introduction

Smells delicious when baking. The dough is also so easy to work with. I use whole wheat pastry flour. Smells delicious when baking. The dough is also so easy to work with. I use whole wheat pastry flour.

Ingredients

    2 cups whole wheat pastry flour
    3/4 cup whole grain yellow cornmeal
    2.5Tbsp lemon zest
    1 tsp salt
    1.5tsp baking powder
    1 cup granulated sugar
    3 whole eggs

Directions

Mix together all dry ingredients. Mix in zest and eggs. Beat until a smooth dough forms. Mold dough into 2 loaves. Bake in preheated oven at 325 degress for 35 minutes. Remove from oven and cool slightly. Cut with serrated knife into biscotti. Return to oven for additional 20 minutes.
