Ingredients

5 or 6 fresh zucchini
3 or 4 tomatoes
.5 small onion
1/4 cup of Extra Virgin Olive Oil
Fresh Parsley
Salt and Pepper to taste
5 fresh Basil, or dried leaves
Directions
Wash, and cut the zucchini, lenghwise; take out seeds. Cut the lengthwise zucchini in quarter size bites. Set aside. Chop the onion, and parsley. Cut the tomatoes, and take seeds out, cut them into small pieces.
In a pan on top of the stove, heat the oil. Place zucchini and the cut up onion in the hot oil, over medium heat. Cook for about 20 minutes, stirring constantly. Add tomatoes. cook for 5 minutes. Season with salt, pepper, parsley and basil. Cook for an addtional 10-15 minutes, or until the zucchini are soft. Enjoy as a side dish, hot or cold in sandwiches.
