    1.5 cups shredded Zucchini
    2 eggs
    .25 C. chopped onions
    4 Tbls. flour
    salt & pepper to taste


Combining all ingredients in a med. bowl. Spoon 2 ozs. per cake into skillet with 2 Tbls. of Canola Oil. Fry until golden brown, turn and brown. Makes 6 , 3" cakes.

If you aren't watching your fats that close, this is fantastic cooked in bacon drippings.
