    Olive oil 1 tbsp
    2 onions, finely chopped
    2 cloves of garlic, finely chopped
    1 can of crushed tomatoes
    0.5 cup of Puy lentils or other green lentils
    6 cups vegetable broth
    3 stalks of celery, finley chopped
    0.5 cup of red lentils
    1 tsp cumin (ground)
    1 tsp chili powder


Soften onion and garlic in the oil before adding green lentils, tomato and vegetable broth (low sodion for preference, but any will do). Boil gently under lid until the lentils are done, approx. 25 min. Use Puy lentils for better presentation, they keep their shape better.

Add cumin, chili powder, the finely chopped celery stalks, and red lentils. Simmer an additional 10 minutes or until celery and lentils are done. Ground black pepper to taste.

Serving suggestions:
Chop parsley and sprinkle on each bowl. Add a dollop of creme fraiche/sour cream and serve with a slice of whole wheat bread (not included).
