    2/3 cup splenda
    1/2 cup light sour cream
    1 cup mashed banana
    2 T. butter
    2 egg whites
    1 tsp. vanilla
    1 c. flour
    1/4 t. salt
    1/2 ts. soda
    2 T. walnut
    1-1/4c. powdered sugar
    1 T. butter
    1 T. fat free cream cheese
    2 T. milk
    1/2 tsp. vanilla


Heat oven to 375 degrees. Spray square pan, 9 X 9 X 2 inches, with
nonstick cooking spray. Beat sugar, sour cream, margarine and egg whites
in large bowl on low speed 1 minute, scraping bowl occasionally. Beat in
bananas and vanilla on low speed 30 seconds. Beat in flour, salt and
baking soda on medium speed 1 minute, scraping bowl occasionally. Stir in
nuts. Spread in pan.
Bake 20 to 25 minutes or until light brown; cool. Spread with Frosting.
Cut into 2-1/4 X 1-1/2-inch bars. 24 BARS.
Mix all ingredients until smooth.

  • Once again made them for my class. I used egg substitute instead, added 1/2 cup flax seed ground. I also had no bar cream cheese so I used whipped, which made the icing thin, and I made half as much. My group liked it & so did the UPS guy! - 9/11/09
