Introduction

I like this smooth-textured, slightly sweet dish as an accompaniment to spicy dishes like Jerk Pork Tenderloin. I like this smooth-textured, slightly sweet dish as an accompaniment to spicy dishes like Jerk Pork Tenderloin.
Number of Servings: 4

Ingredients

    1 sm-med Butternut Squash
    1/2 cup Frozen, Fresh or Canned Sweet Corn Kernels
    2 tbsp Low Fat Cream Cheese
    Salt and Pepper to taste
    *Optional: fresh chili(s) to taste

Directions

Peel and cube butternut squash. Boil for 10 minutes.
Add corn (and chili(s) if desired) and boil for a further 5 min.
Drain. Add Cream cheese. Mash or puree ingredients together adding salt and pepper to taste.

Serves 2-4
