Ingredients

    6 cups of fresh spinach (rinsed and drained)
    1 1/2 cup mandarin oranges (2-11oz cans)
    1/2 cup sliced almonds
    2 tbl Enova oil


Directions

Drain mandarin oranges and pour light syrup into blender. Add Enova oil and blend until combined. Put drained fresh spinach into a large salad bowl. Add drained mandarin oranges and almonds. Pour dressing over, toss and enjoy.
Makes 4 1-1/2 cup servings
