    2 egg whites
    1/4 tsp cream of tartar
    1/4 tsp salt
    1/2 tsp vanilla extract
    1/2 cup splenda
    4 egg whites, or 1/2 cup egg substitute
    1/3 cup(s) splenda
    2 Tbsp wheat flour
    1/8 tsp salt
    1 cup fat free sour cream
    2 Tbsp lemon juice
    1 1/2 pounds apples, Granny Smith, peeled cored & thinly sliced
    1/8 tsp nutmeg, ground


For the meringue crust:
Preheat oven to 300 degrees. In a large mixing bowl, beat the egg whites, cream of tartar, and salt until soft peaks form. Add the vanilla, and slowly beat in the splenda until very stiff and glossy. Spread the mixture into a 10-inch pie plate to form a shell. Bake 50 minutes. Turn the oven off, and leave the meringue crust in the oven 1 hour so it cools slowly.

For the filling:
Preheat oven to 400 degrees. In a medium mixing bowl, blend the egg whites or egg substitute, sugar substitute, flour, salt, sour cream, and lemon juice. Gently fold in the sliced apples. Pour into the meringue-crust pie pan. Sprinkle with the nutmeg and coat the entire pie with the cooking spray. Bake 40 minutes or until the top is browned and set. Chill before serving.

  • This is a good pie and very doable. You can change the fruit ...and use xylitol instead of sugar. I uses tapioca flour in my recipe due to being gluten free and it was quite tasty . Give it a try, it is much better snack then most. Thanks for sharing. - 3/14/10

  • Interesting recipe. Good flavor but the apples didn't cook they were still very crisp after 40 mins. - 10/25/09
