Ingredients

    2 T. olive oil
    1 large onion, diced
    2 cloves garlic, minced
    1 15 oz can diced tomatoes
    1 T. capers, drained and chopped
    1 large head cauliflower, cut into florettes
    juice of 1/2 lemon
    2 - 4 oz low fat crunbled feta cheese
    finely chopped parsley

Directions

Preheat broiler and lightly oil a 2-quart gratin dish.

Heat oil in a skillet over medium heat. Add onion, garlic, oregano and cook until the onion is wilted, about 5 minutes. Add tomatoes, cook for 7 more minutes more. Add salt and pepper to taste.

Steam cauliflower for 5 minutes. Gently toss with tomatoe-onion mixture. Slide into gratin dish. Squeeze lemon juice over top. Crumble feta over top. Place under broiler until cheese is beginning to brown, about 10 minutes. Sprinkle parsley over top and serve.

Can also be baked ahead covered with foil and just rewarmed under the broiler for 10 minutes.
