Introduction

Ingredients

    1 (8 oz) package whole wheat penne pasta
    2 tbsp Vegetable Oil
    1/2 lbs. Portabella Mushrooms
    1/2 c. Smart Balance, Smart Balance Light Buttery Spread
    1/4 c. Whole Wheat Flour
    2 c. Milk
    2 c. Mozzarella Cheese, part skim milk
    10 oz pkg. Spinach
    1/4 c. Kikkoman Reduced Sodium Soy Sauce
    4 oz. Goat Cheese, Soft

Directions

Preeheat oven to 350 degrees. Lightly grease a 9x13 in. baking dish.

bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 mins., until al dente, and drain.

Heat the oil in a saucepan over medium heat. Stir in the mushroom, cook 1 min. and set aside. Melt margarine in the saucepan. Mix in flour, garlic, and basil. Gradually mic in cooked pasta, mushrroms, spinach , and soy sauce. Transfer to the prepared baking dish and top with remaining cheese.

bake 20 mins in the preheated oven , until bubbly and lightly brown.
