    3/4 cup dry French lentils
    1 bay leaf
    2 tsp olive oil
    white part only of large leek, minced
    stems of rainbow chard chopped
    1 carrot, French cut
    1 clove of garlic, pressed
    3/4 cup red wine
    1 T tomato paste
    2 tsp dijon mustard
    1 tsp olive oil
    1/3 cup veggie broth
    chard leaves, chopped coarse
    salt, pepper, parsley to taste


Boil 1 1/2 cups salted water. Add lentils and bay leaf and simmer until lentils are tender (about 25 minutes.) They should hold their shape.

In a sauce pan, heat 1 tsp olive oil. Add chard and saute for one minute. Add broth, cover and simmer until chard is tender

In a saute pan, heat 2 tsp olive oil and saute leeks, carrots and chard stems until they start browning. Stir in tomato paste. Cook for another minute. Add wine and deglaze until liquid is reduced by half. Stir in mustard, salt and pepper to taste and garnish with fresh parsley.

Stir in lentils and serve on a platter with the chard ringing the platter and the lentils and vegetables in the middle.
