    1 to 2 cups of baby spinach
    2 Tbs. Basil & Garlic Goat Cheese
    1 Tbs. Candied Walnuts – see recipe
    2 Tbs. Lite Balsamic Vinaigrette
    1 Tsp. Honey
    8 Grape Tomatoes
    3 oz. of cooked chicken breast – I cooked mine with a bit of Lawry’s Seasoning Salt


Place baby spinach on plate, chop grape tomatoes in half and place on spinach. Put dollops of goat cheese on salad and sprinkle with candied walnuts. Put honey and dressing in small bowl and microwave for 15 seconds. Stir dressing mixture and pour over salad. Enjoy!
