Number of Servings: 12


    1 box of whole wheat rotini (spiral) pasta
    1 LB extra lean ground beef
    1 cup part skim ricotta cheese
    3 cup Ragu Spaghetti Sauce
    1/2 cup Egg Beaters or other substitute
    3 Tbl Parmesan Cheese
    2 cups part skim mozzarella cheese
    1 pkg of frozen broccoli (10 oz)
    1 pkg of frozen cauliflower (10 oz)
    1 pkg of frozen yellow squash (10 oz)
    3 or more cloves of garlic (to suit tastes)
    2 Tbl onion powder
    5 leaves of chopped fresh basil


Put water on to boil for pasta. While pasta cooking, about 15 minutes, brown ground beef in skillet. After beef is browned, add chopped garlic cloves, basil leaves, onion powder, spaghetti sauce, and all vegetables. Stir well.

Mix ricotta & parmesan cheese with Egg Beaters in a seperate bowl.

Drain pasta when done. Spray large casserole cooking dish with Pam, then place pasta noodles at bottom of dish. Layer ricotta cheese mixture over pasta. Pour beef, veggie, and spaghetti sauce mixture over pasta and ricotta cheese mix. Top with mozzarella cheese.

Bake, uncovered, in 375 degree oven for about 30 minutes.
