    1 3/4 C oatmeal (not instant)
    1/2 C soy flour
    1/2 C brown rice flour
    1/2 C Sweet Fiber All Natural Sweetner
    1 T baking powder
    1/4 t salt
    1 t cinnamon
    1/4 t nutmeg
    1/4 t cloves
    2 large carrots, grated
    1 medium zucchini, grated
    2/3 C Almond Breeze Unsweetened Vanilla Non-Dairy Beverage
    3 T unsweetened applesauce
    1/2 C liquid egg whites
    1/4 C golden raisins


Preheat oven at 350 degrees. Prepare muffin pan with nonstick spray.

In a mixing bowl, combine oats, flours, sugar, baking power, salt, cinnamon, nutmeg and cloves.

In another mixing bowl, combine carrots, zucchini, Almond Breeze, applesauce and egg whites.

Mix dry ingredients with wet ingredients just until moistened. Fill muffin pan and bake 20 to 25 minutes or until golden brown.
