    2 Granny Smith apples, cored, peeled & sliced 1/8-1/4" thick
    1/4 tsp cinnamon
    1/4 tsp allspice
    1 1/2 tsp sugar in the raw

    1 1/2 c brown rice flour
    1 1/4 c soy flour
    3/4 c oats
    1/2 c Sweet Fiber All Natural Sweetener
    1/4 c Splenda Brown Sugar Blend
    1 Tbsp baking powder
    1/2 tsp baking soda
    3/4 tsp cinnamon
    1/2 tsp allspice
    1/4 tsp salt
    1/4 c unsweetened applesauce
    3/4 c liquid egg whites
    1 1/2 c Almond Breeze Unsweentened Vanilla Non-Dairy Beverage


Preheat oven to 350 degrees.

Gently mix together the sliced apples, 1/4 tsp cinnamon and 1/4 tsp allspice and set aside.

In a large bowl, combine the flours, oats, sugars, baking powder, baking soda, cinnamon, allspice and salt.

In a separate bowl, beat the egg whites into the applesauce. Add the Almond Breeze and mix well.

Stir wet ingredients into dry ingredients until just moistened. Spoon into a muffin pan lightly sprayed with nonstick spray. Top each one with 2-3 slices of apple. Press apple slices lightly into the batter. Sprinkle each one with 1/8 tsp sugar in the raw and bake for 20 minutes or until a toothpick comes out clean.
