    2-3 c. broccoli flowerets
    1-2 c. cauliflower, chopped
    3-5 red potatoes, chopped into 1/2 inch cubes
    3-4 stalks celery, chopped
    3-5 carrots, chopped
    1/2-1 medium onion, chopped
    2 cans chicken broth (or 1 can + 1 can water)
    3 c. skim milk
    3 T flour
    6 oz. Velveeta lower-fat cheese


Chop all vegetables, put them in a medium soup crock with chicken broth; In the meantime, whisk flour into milk.

Cook about 15 minutes until veggies are tender.

Add milk-flour mixture slowly, stirring. Cook 3-5 minutes.

Add Velveeta, chopped into chunks, cook until melted.

My kids like this soup pureed (and they hardlly know about all the veggies then!). I put the soup in a blender and then serve it hot with bread or crackers.
