    Water, tap, 28 cup 8 oz. (7 quarts)
    Red Potato, 56 oz (3 lbs)
    Pinto Beans-La Preferida, 2 cups (dried)
    Onions, raw, 2 cup, chopped
    Carrots, raw, 2 cup, chopped
    Zucchini, 4 cup, sliced
    Basil, 1 cup fresh (packed)
    Parsley, 1 cup fresh (packed)
    Garlic, 8 cloves
    Tomato, 1 medium or 2 tbsp paste
    Olive Oil, 2 cups)
    Salt, 2 tbsp


Soak beans overnight, or cook in separate pan while preparing the rest of the minestrone. Add just enough water to cover. Then, add to the rest of the minestrone. Cut all ingredients and cook for about 2 hours. Mash half of the vegetables in the food processor or food mill. Add small pasta, or crusty bread and sprinkle with parmesan cheese. Pasta, bread and cheese not calculated in calorie count.
