    1 lb Pinto Beans
    2 Cups Chicken Broth ( Swanson Low Sodium/Fat Free/No MSG)
    1 Tbsp Cumin Seeds, Ground
    1 Tbsp Coriander Seeds, Ground
    1 Tbsp Chili Powder
    6 Cloves Garlic, Crushed
    4 Cups Water


1. Rinse beans well & check for small stones.
2. Cover with 4 cups of water and soak overnight.
3. Place beans with water into slow cooker and allow to cook until soft (about 10 hours).
4. When beans are soft, add the Chicken Broth, Crushed Garlic, Ground Cumin, Coriander, and Chili Powder.
5. Cook for another 2 hours.

Taste and adjust seasoning. The freshness of your spices will affect the taste, so I always use and grind whole spices for a stronger flavor. Since the Chicken Broth already has salt, I do not add any more until I taste the finished product. In my family, my husband likes more salt, so he will usually add to his, but I usually eat as is. I will sometimes add 1 Tbsp Crushed Red Pepper for a little zip (our family likes things peppery).
