    3 Cups Flour
    1 Tsp. Baking Soda
    1/2 Tsp. Baking Powder
    1 Tsp. Salt
    2 Tbsp. Cinnamon
    1/4 Tsp. Nutmeg
    1 Cup Sugar
    1 Cup Unsweetened Applesauce
    3 Cups Shredded Zucchini
    1 Tsp. Vanilla
    2 Flaxseed Egg Replacers
    1/3 Cup Plain Soymilk


Place dry ingredients in a large bowl. Add applesauce & stir well. Add flaxseed egg replacer & continue to mix. Add zucchini, vanilla & soymilk & stir until completely blended.
Spray *2* loaf pans with a no-stick vegetable spray. Pour batter into prepared loaf pan. Bake at 350 F for 55-60 minutes. Cool 10 minutes before removing from pans.

NOTE-12 servings/loaf pan. 2 loaf pans=24 servings.
