    10 OZ. BS Chicken Breast
    2 Cups Reduced Sodium Chicken Breast
    6 OZ. Orzo
    1/2 Cup diced Carrot
    1 Tablespoon plus 1 teaspoon olive oil
    1/2 Cup chopped shallots
    1 Clove garlic, minced
    3 Tablespoons chopped fresh basil or 1 teaspoon dried
    2 Teaspoons grated lemon zest.
    2 Teaspoons fresh lemon juice
    1/2 Teaspoon freshly ground black pepper


Cut the chicken into 1/2 inch dice and set aside.

In a medium saucepan over medium high heat, bring the chicken broth to a boil. Add the orzo and carrot. Return to a boil and reduce the heat to low. Cover and simmer for 12 to 15 minutes, or until carrot and pasta are tender.

Meanwhile, in a medium non-stick skillet over medium high heat, warm the oil until hot,, but not smoking. Add the shallots and garlic, cook, stirring until the garlic is fragrant, about 30 seconds. Add the reserved chicken and cook, stirring until it is cooked through, about 6 minutes.

Remove the skillet from the heat. Add the orzo-carrot mixture, the basil, lemon zest, juice and pepper. Stir to combine.
