Introduction

Number of Servings: 48

Ingredients

    4 Cups Grated Zucchini
    1 Cup Bisquick
    1/2 Cup finely chopped onion
    1/2 Cup grated parmesan cheese
    2 T snipped parsley (optional)
    1 tsp salt
    1/2 tsp italian seasoning (oregano, marjoram)
    1/8 tsp garlic powder
    Dash of pepper
    1/2 Cup Vegetable oil
    4 eggs (slightly beaten)

Directions

Mix bisquick, eggs and vegetable oil till mix is absorbed. Add all other ingredients and mix. Spoon into greased mini muffin pans. Bake at 350 for 35 - 45 minutes until golden brown. Makes 48 mini muffins.
