Ingredients

6 ounce Chicken Breast Tenderloin
1 1/2 c. Sweet Red Bell Peppers
3 Small or Plum Tomatoes
1/8 cup Fresh Chopped Parsley
1 tbsp Apple Cider Vinegar
6 tbsp Red Wine Vinegar
1/4 c. Chopped Red Onion
2 clove Garlic minced (or equiv. from a jar)
1/4 c. Fresh Parsley
1/2 tsp Salt
3 tsp Garlic Powder
3 tsp Onion Powder
1 tbsp Oregano
Directions
Cook chicken on grill or broil in oven and chop into bite sized pieces. Mince Garlic and saute with chopped onion in the apple cider vinegar in large skillet over med/high heat untill onions start becoming clear.
Reduce heat. Add red wine vinegar and chicken. Mix as so the chicken is saturated with the liquid. Cook just enough to warm chicken.
Add peppers, parsley,tomatoes and remaining Spices and mix, then poor in chicken broth.
Cover and simmer for about 15 min.
**This is great served by itself, over some whole wheat pasta or brown rice. I like to add about an ounce of part skim mozzarella cheese on top of each serving.
