You can adjust the amount of cinnamon and nutmeg to your tastes. You can adjust the amount of cinnamon and nutmeg to your tastes.

    1 large egg, beaten
    1 cup whole wheat flour
    1 tablespoon baking powder
    1/4 teaspoon salt
    1 tablespoon sugar
    2 tablespoons canola oil
    1 teaspoon vanilla extract
    1 cup skim milk
    cinnamon (optional)
    nutmeg (optional)


Makes 9 pancakes (1/3 cup batter)
Beat the egg in a medium size bowl. Add the flour, baking powder, salt, sugar, oil, vanilla, milk, cinnamon & nutmeg. Do not mix until all ingredients are in the bowl. Mix only until ingredients are blended, do not overmix. Let sit for 3 to 5 minutes. Cook on a preheated, 350F flat grill. Do not add oil.
