Introduction

Number of Servings: 12

Ingredients

    1/4 c. sugar
    1/2 c. oil
    1/4 c. cider vinegar

    Bring these to a boil then let cool

    1 red pepper (diced)
    1 yellow pepper (diced)
    1 green pepper (diced)
    1 bunch green onions
    1 bunch cilantro (finely chopped; you can adjust this to your own taste)
    1 onion chopped

    1 can black beans (drained & rinsed)
    1 can black eyed peas (drained & rinsed)
    1 can diced tomatoes
    1 bag petite corn

    1 jicama (diced), optional
    Jalepenos (chopped), optional

    Pour wet on dry and mix thoroughly. :)

Directions

Bring sugar, oil and cider vinegar to a boil and set aside to cool.

Prepare vegetables as noted (dice, rinse, etc.)

Pour wet on dry and mix thoroughly.
