    2 C Organic Spelt Flour
    1 med banana masshed
    1 tbsp baking powder
    1/2 tsp cinnamon
    1 lrg egg beaten
    1 cup soy milk (or reg milk)
    4 tbsp apple sauce
    4 Tbsp splenda


Mix dry ingredients and in a separate bowl mix wet ingredients.

Add wet mixture to dry, stir and pour into muffin tins.

Makes 12 lrg muffins

Cook at 400 for 20 min.

For a fancier looking muffin sprinkle some rolled oats on top before popping in the oven.

**note you can also substitute different fruits in this recipe however for less sweet fruit you may want to add some honey or more splenda.
