    2 large peaches, peeled and diced
    1/2 cup fresh corn
    1 jalapeno pepper, ribs and seeds removed and finely chopped
    1 tsp minced ginger root
    2 shallots, finely chopped
    1 tbs balsamic vinegar, preferably white
    1 tbs broth
    salt to taste
    2 tsp to 2 tbs minced cilantro


Serves 4. Delicious with poultry or roast pork.

Spray a heavy saucepan with cooking spray. Saute ginger root, shallots and jalapeno for two minutes. Add peaches, corn, vinegar and broth. Turn heat to low and simmer until peaches are tender and slightly pulpy, about ten minutes. Remove from heat and stir in cilantro and salt to taste.
