    3c shredded zucchini
    1 2/3 c sugar
    2/3 c veg oil
    2 tsp vanilla
    1c egg beaters
    3 c whole wheat flour
    2 tsp baking soda
    1 tsp salt
    1 tsp ground cinnamon
    .5 tsp ground cloves
    .5 tsp baking powder


heat oven to 350. Spray PAM in 2 loaf pans. Mix zucchini, sugar, oil, vanilla and egg beaters in lrge bowl. Stir in remaining ingredients. Pour into pans. Bake 50 minutes or until wooden pick inserted in center comes out clean. Cool 10 min. Makes 2 loaves of 24 slices each
