    1 box stove top stuffing mix
    1/2 cup butter, melted
    3 cups julienned zucchini
    1/4 cup finely chopped onion
    1/2 cup grated carrot
    1/2 can cream of chicken soup
    1/2 cup sour cream
    3/4 cup grated cheddar cheese


Mix the stuffing mix and butter together. Set aside about 1/2 cup of the mixture; spread the rest over the bottom of a 9 x 9-inch baking dish.

In a large bowl, mix all remaining ingredients together. Spread over the stuffing mixture in the pan. Sprinkle the reserved stuffing mixture over the top.

Cover with foil and bake at 350 for 25 minutes. Remove the foil and continue baking for 20 more minutes.

Makes about 8 servings.
