Introduction

This is a great way to use your summer greens. You can substitute mustard green, chard or any other green for the Kale and it is delicious. This is a great way to use your summer greens. You can substitute mustard green, chard or any other green for the Kale and it is delicious.

Ingredients

    2 cups chopped kale
    1 onion diced
    1/2 red pepper diced
    tbsp olive oil
    6 oz goat cheese
    6 eggs
    1 1/2 cups skim milk
    3 tbsp flour
    dried mustard
    salt & pepper

Directions

steam kale. saute onion and red pepper in olive oil. in separate bowl crack eggs, add milk, goat cheese, dried mustard and salt & pepper. layer kale onioin and pepper on bottom of pie pan and add egg mixture. Sprinkle with paprika if desired and cook at 375 degrees for 45 minutes. enjoy..
