Introduction

Ingredients

    6 Tilapia fillets
    2 eggs, beaten
    1 Tbsp. water
    1/4 cup extra virgin olive oil
    1 tsp. paprika
    1 tsp. pepper
    1 tsp. salt
    1/4 cup parmesan cheese
    1/2 cup bread crumbs

Directions

Preheat oven to 375. Use cooking spray to spray a glass dish for baking. Beat the eggs and water in a bowl. Combine olive oil with bread crumbs, grated cheese and seasoning. Dip tilapia in eggs then in bread crumb mixture and place in the sprayed baking dish. Cook for 12-15 minutes until cooked through.

I have also used Zatarain's Creole Seasoning in place of the paprika, salt and pepper.

    The calorie count was way off, it says 105 calories per serving- mine was 266 calories. It tasted great and I would definitely eat it again, but be wary of the calories. - 1/27/10
