Introduction

Ingredients

    Olive Oil, 2 tbsp
    Butter, salted, 2 tbsp
    Onions, raw, 1 large, finely diced
    Zucchini, 2 cups, grated
    salt, 1 tsp
    White Wine, 1 cup
    Chicken stock, one 10 oz can diluted to make 4 cups
    cooked chicken breast, 8 oz (use leftovers)
    Parmesan Cheese, shredded, 200 grams

Directions

Put the diluted chicken stock in a saucepan to heat and keep hot on back of the stove.
In a larger pot, saute the onion in the olive oil and half the butter, add the zucchini and saute briefly, add the salt and lower the heat to medium low. Add the wine and stir until absorbed. Add the chicken stock a ladle at a time, stirring until creamy and thick, about 25 minutes. Add the butter and half the cheese. Serve in shallow bowls with the rest of the cheese available for sprinkling on top. Makes 6 main course dishes, with only a small salad needed for accompany.
